In the Age of Avocado Toast, it can be tricky for other toasts to get the attention they deserve, and strawberry toast deserves a lot of attention. These two versions are great places to start. They are designed to work on a range of bread, so use whatever you prefer.
Roasted Strawberry Toast with Cream Cheese
Roasting is a great way to redeem those delicate strawberries that are perhaps a little too ripe to eat raw. They become jammy and tart when roasted and taste delicious atop cream cheese-slathered toast.

Ingredients
- 1 cup strawberries
- 1 tablespoon granulated sugar
- 1 tablespoon olive oil
- 1/4 teaspoon cinnamon
- 2 slices bread
- 1/4 cup cream cheese
Instructions
- Preheat an oven to 350°F.
- Hull the strawberries and cut them into quarters. Toss the strawberries with the cane sugar, olive oil, and cinnamon. Arrange in a single layer on a baking sheet. Roast until the strawberries are softened and browning at the edges, about 30 minutes. Set aside.
- Toast the bread. Generously slather the bread with cream cheese or ricotta. Top each with a generous spoonful of the roasted strawberries.
Notes
Mix things up by using ricotta in place of the cream cheese.
Fresh Strawberry Toast with Almond Butter
Think of this as a PB and J all grown up. The honey keeps things on the sweet side, but this toast can edge tastily towards the savory if you decide to skip it.

- 1 teaspoon honey (optional)
- Flaky salt to taste

- Hull the strawberries and slice them. Toast the bread. Spread the toast evenly with the almond butter. Spoon the strawberries on top of each slice, drizzle with the honey, if you like, and finish with flaky salt.
