Publisher's note: A very simple recipe just right for one - especially if that one is culinarily challenged, like me :)
Serves 1
- Butter or oil as needed
- 1 slice tomato
- ¼ cup (60mL) sautéed spinach
- 1 egg
- 1⁄8 cup (30mL) grated Parmesan
- Salt and freshly ground black pepper
Heat oven to 375°F. Smear a bit of butter or oil in a ramekin; line with tomato and sautéed spinach. Break egg on top of spinach and sprinkle with cheese. Put ramekin on a baking sheet and place in oven for 10 to 15 minutes, or until egg is set and white has solidified. Because the cup retains heat, egg will continue to cook after you remove it from the oven, so you’ll want to undercook it slightly. Precise time will depend on the oven, but with even heat it will take 12 minutes. Season with salt and pepper to taste and serve in ramekin.
