BLUEBERRY-LEMON MOUSSE TARTLETS

serves 6

For the Crust:
1¼ cups Brazil nuts
½ cup dates
zest from ½ lemon
½ teaspoon cinnamon
¼ teaspoon nutmeg
pinch of salt

For the Filling:
2 ripe avocados
2½ cups blueberries, fresh or thawed
Juice of ½ lemon
zest of ½ lemon
¼ cup cold-pressed coconut oil
1/3 cup raw honey
½ vanilla bean or ½ teaspoon vanilla extract

To make the crust, place Brazil nuts in a food processor and pulse until finely ground. Add dates, spices, lemon zest & salt and process until sticky. Divide evenly and press into the bottoms of 6 mini tartlet molds. For the filling, blend all ingredients in a high-speed blender until smooth and creamy. Divide equally, pouring over the crusts. Set in the freezer for 2 hours to firm. Let thaw 20 minutes before serving.
