A Wise Choice

Makes 1 Drink

1 ounce (2 tablespoons) chilled limoncello
¾ ounce (1 ½ tablespoons) Housemade Grenadine
4 dashes orange bitters
4 ounces (1/2 cup) sparking wine, preferably Cava or Prosecco
1 strip orange zest

Add the limoncello, grenadine and bitters to a champagne flute. Top off with the sparking wine and garnish with the strip of orange zest. 

Housemade Grenadine

Makes about 2 ½ Cups

2 cups unsweetened pomegranate juice, preferably freshly juiced
2 cups packed light brown sugar
¼ cup pomegranate molasses
1 tablespoon orange blossom water

Put the pomegranate juice in a saucepan and bring to a gentle simmer over moderate heat. Add the brown sugar and stir until dissolved. Remove from the heat and stir in the pomegranate molasses and orange blossom water. Let cool. The grenadine will keep, refrigerated, up to 1 month.
