Fresh, crisp fennel bulbs are the harbingers of spring with their lighly licorice-y flavor. We love them straight up, but they also play nicely in a variety of applications. Here's a few of our favorites.
Fennel Ginger Sauerkraut
Fresh fennel bulb provides a slightly sweet counterpoint to the sourness of lactofermented kraut, and fresh ginger gives it a boost of fresh flavor. (Image via Fermenters Club)
Grated Fennel Relish
A quick fennel relish that is all licorice and slightly sweet tanginess. It's good on hot dogs and even better on grilled fish. (Image via Food in Jars)
Fennel Frond Pesto
Another perfect way to use the fronds from your fennel. Pesto made with sunflower seeds is great for those who can't have pine nuts! (Image via Gluten Free(k))
