Description

These chocolates are simple to make and simply delicious. The key, as always, is to use top-notch ingredients.

Ingredients

1-1/2 lbs good quality bittersweet chocolate, broken into small pieces (we use Scharffenberger 70% cacao)
Cooking spray or vegetable oil
3/4 cup dried cranberries
1/2 cup golden raisins
3/4 cup salted roasted sliced almonds (or walnuts, pecans...)

Methods/steps

1. Melt chocolate in top of a double boiler or metal bowl set over a saucepan of barely simmering water, stirring occasionally until smooth.
2. While chocolate is melting, line bottom of a sheet pan or cookie sheet with foil, then coat lightly with cooking spray.
3. Remove chocolate from heat and stir in fruit and nuts.
4. Spread mixture onto sheet pan and refrigerate until firm, about 45 minutes.
5. Lift chocolate from foil and break into pieces.

Makes about 3 dozen pieces. Keeps chilled, about 2 weeks.

Additional Tips

Port and chocolate are a natural pair. In addition to the traditional ones from Portugal, there are also port-style wines being made around the world with grapes such as Shiraz and Zinfandel. And since the chocolate is bittersweet, you could also enjoy this dessert with the red wine left in your glass at the end of a meal.
