Single-Serving Mug Coffee Cakes

What’s coffee without coffee cake? When you don’t have time to bake a whole cake (or if you’re trying to avoid eating a whole cake) these mug cake versions of coffee cake are the perfect thing to make. Plus, it takes less time to make this tiny treat than it does to brew a whole pot of coffee.

Ingredients

For the cake
  • 2 Tb butter, softened
  • 2 Tb sugar
  • 2 Tb heavy cream
  • ¼ tsp vanilla
  • ¼ tsp cinnamon
  • ¼ cup all-purpose flour
  • 1/8 tsp baking powder
  • Dash of salt
For the topping
  • 2 Tb butter, softened
  • 2 Tb flour
  • 1 tsp cinnamon
  • 2 Tb brown sugar

Instructions

Soften butter, add sugar, and whisk to fluff up. Add heavy cream, vanilla, cinnamon and stir. Mix flour, salt, and baking powder together in a separate bowl. Add to a mug.

Make the topping: soften butter, add flour cinnamon, and brown sugar until crumbly. Crumble onto the flour mixture in the mug, patting it down gently.

Microwave for 2 minutes, let it cool for 1 minute. Sprinkle with powdered sugar and enjoy.
