Rich Chocolate Mulled Wine

Rich and dark, this unusual pairing capitalizes on the fact that wine experts have detected umami in rich, full-bodied red wines. The addition of the chocolate turns a holiday favorite into a year-round treat. Make sure you use a good, drinkable wine, as it will make a difference.

Serves 6-8

Warm the red wine and bring it to a simmer (do not boil).
Add the spices, then the cacao and finally the sugar or honey.
Pour the wine into heat-resistant glasses and serve immediately.

  • 1 cinnamon stick
  • 1 teaspoon ground allspice
  • 5 whole cloves
  • 5 oz. 100% pure cacao or 85% cacao dark/bittersweet chocolate
