Do-Si-Dos Crusted Chicken with Satay Stir Fried Vegetables and Brown Rice

Ingredients

  • 2 cups Do-Si-Dos crushed
  • 1 cups panko bread crumbs
  • 1/4 cup all-purpose flour
  • 1 egg
  • 1 tablespoon water
  • 1 package chicken breast tenders

Instructions

Heat oven to 425°F. Line cookie sheet with foil; spray with cooking spray.

In shallow dish, place flour. In another shallow dish, beat egg and water. In third shallow dish, mix bread crumbs and cookie crumbs.

Coat chicken with flour; dip into egg mixture, then coat with bread crumb mixture. Place on cookie sheet.

Bake 15 to 20 minutes, turning once, until chicken is no longer pink in center and coating is golden brown.

Chef Eric: We actually did a sweet menu last year to support our local girl scout chapter. This year, we are packing the menu with bold flavors, and including savory dishes too.

Edible: Let's talk wine pairing. When we open our sleeve of Thin Mints, what should we be drinking?
Chef Eric: My two favorites are: pinot noir or a Chateau ste. Michelle Winery merlot.

Edible: Which Girl Scout Cookie is your favorite, and why?
Chef Eric: Samoas is by far the best. It’s very versatile, both savory and sweet.
