Campsite Biscuits

Breakfast at the campsite has never been easier.

Ingredients

  • 2 ½ cup self-rising flour, divided
  • ½ to ¾ tsp. salt
  • 1 ½ tablespoon sugar
  • 2 tablespoon shortening
  • 2 tablespoon butter, softened
  • 1 ¼ cup buttermilk
  • 1 ½ tablespoon butter, melted

Instructions

In a bowl, combine 2 cups flour, salt and sugar. Cut in shortening and soft butter until pea-sized crumbs form. Stir in buttermilk until incorporated, but don’t over-mix (dough will be very wet). Let dough rest 2 to 3 minutes.

In the Oven (10” pot)

Preheat oven to 400 F. Meanwhile, lightly oil Dutch oven. Place remaining ½ cup flour in a bowl and grease a large spoon. For each biscuit, drop a spoonful of dough into the flour. With floured hands, shape dough into a soft ball, shaking off excess flour. Set in oiled pot. Repeat to make a single layer of biscuits. Drizzle with melted butter. Place Dutch oven on center rack in oven to bake uncovered 20 to 30 minutes.

Over the Fire (About 26 hot coals – 10” pot with lid)

Lightly oil Dutch oven. Place remaining ½ cup flour in a bowl and grease a large spoon. For each biscuit, drop a spoonful of dough into the flour. With floured hands, shape dough into a soft ball, shaking off excess flour. Set in oiled pot. Repeat to make a single layer of biscuits. Drizzle with melted butter and cover pot with lid.

Set the Dutch oven on a ring of 7 hot coals and place about 19 coals on the lid. Bake to 20 to 30 minutes, rotating pot and lid twice during cooking. Moving several coals to the center of lid near the end of cooking time to promote browning.

Tip: Short on time? Try baking refrigerated biscuit dough in a greased 8” round metal baking pan set on a riser inside the Dutch oven. Ready in 10 to 20 minutes!
