Bruce Weinstein and Mark Scarbrough have written a lot of cookbooks. Seventeen, in fact, with more than 10,000 original recipes. So you can imagine that continuing to be creative can be tricky. That's why for their latest book, the focus is goat. Goat: Meat, Milk, Cheese explains everything you ever wanted to know about the world's most popular meat. On this episode of Smart Food, the pair discuss how to cook the meat, how to use the cheese for more than the usual beet-and-goat cheese salad and how to use the milk in creative ways – like in goat-cheese brownies.
