SPICY BACON BISON BURGER from BareBurger

BareBurger, a new addition to the Queens burger scene, is also the latest champion in the fight for green, environmentally friendly chow. Dedicated not only to delicious, heavenly burgers, the folks at BareBurger are committed to sustainable methods of farming and agriculture, and serve dishes made using only the freshest, organic ingredients. Taking their commitment to green a step further than the rest, BareBurger serves their eco-friendly food in an eco-friendly space; their roof was made from antique tin reclaimed from deconstructed barns, and their hand-crafted counter tops and tabletops were built from damaged and dying trees. Adapt the BareBurger philosophy into your home and kitchen by making their Spicy Bison Burger! Bison is a delicious meat easily found at local farmer’s markets and is leaner and gamier than ground beef. However, beef may be used as a substitute.

Serves 4

1 lb ground organic bison
4 tablespoons olive oil, divided
4 slices of aged cheddar cheese
4 slices nitrate free applewood bacon, cooked
1/2 cup of organic buttermilk ranch dressing
3 tablespoons hot sauce
4 brioche or organic seven grain burger buns
Toppings: shredded iceberg lettuce, sliced tomato, sliced red onions, chopped jalapeno peppers

Season bison with 3 tablespoons olive oil, pepper and salt. Form four loose 8oz patties. Heat skillet or grill to medium-high. Cook burgers on one side for 4 minutes or until well-browned. Turn gently and cook 2 minutes. Add cheese and continue cooking 2 minutes of until thermometer inserted in side of each burger measures 160 degrees F. Meanwhile, in medium bowl, combine the buttermilk dressing and hot sauce. Set aside. Brush remaining tablespoon of olive oil on split buns and toast. Spread with spicy buttermilk dressing while still hot, then top with burger, bacon and assorted toppings.
