Red Beet Chocolate Cake

1 ¾ c. flour

½ t. salt

3 eggs

1 ½ c. beets, pureed

1 t. vanilla extract

1 ½ t. baking soda

1 ½ c. sugar

1 c. vegetable oil

2 oz. unsweetened chocolate

Sprinkle of confectioners’ sugar

 

Methods/steps

Preheat the oven to 350°F. Melt and cool the baking chocolate. Sift together the flour, baking soda and salt and set aside. Combine sugar, eggs and oil in a large mixing bowl. Beat with an electric mixer set at medium for 2 minutes. Beat in the beets, cooled chocolate and vanilla. Gradually add the dry ingredients, beating well after each addition. Pour into a greased 13x9x2” baking pan and bake for 25 minutes or until the cake tests done. Cool the pan on a rack. Once completely cool, sprinkle cake with confectioners’ sugar and serve.
