Honey Glazed Figs with Goat Cheese and Sea Salt

10 figs, any local variety

4 oz. local goat cheese

2 T. wildflower honey

Sea salt, preferably coarse grain such as Cyprus Flake, Sel Gris or Fleur de Sel 

Methods/steps

Preheat the broiler to high. Using a paring knife, trim off tops of figs and halve lengthwise. Take a small pinch of goat cheese and push into center of each fig half. Liberally brush figs with honey and place on greased baking sheet. Broil as close to heat as possible until they begin to brown and cheese softens, approximately 3–5 minutes. Remove from oven, sprinkle with sea salt and serve immediately. You could also serve them unsalted on a platter and let guests choose from a variety of salts to use at their discretion.
