Since last fall, we at Sustainable Food Systems have been working in Cabell County, West Virginia, developing and implementing healthy school lunch menus in 28 public schools in the district. This wonderful project was the brainchild of British celebrity chef Jamie Oliver, who like us has been involved in revolutionizing the old standards of the food industry, particularly in schools. I have fond memories myself of some of the school dinners we had back in the day, and while that kind of nostalgia often has us remembering things as better than they really were, cooking simple dishes with good ingredients is something that will never change. Teaching kids how to eat well and how to cook for themselves is something we can all do, even if it means learning how to do it together. This is a collection of kid-friendly recipes, all favorites of ours, for you to test out with your own family.
