GRATED SWEET POTATO CASSEROLE |

My mom, Barbara, has been making this casserole for as long as I can remember. It’s a great sidedish but is sweet enough to be served as a dessert. I like it because it is simple and highlights one of our specialty crops, sweet potatoes.
2 cups grated raw sweet potatoes (unpeeled) 4 eggs, beaten 3 tbsp butter 2 cups whole milk 2 tbsp flour 3/4 cup sugar Dash of salt Cinnamon and nutmeg to taste
Mix all ingredients and put in a greased casserole dish.
Bake at 350° for one hour.
Serves 3 to 4 people and can be easily doubled.
You may also use your favorite sugar substitute.
