These days, it’s hard to imagine city street corners without lines of food trucks—but the rise of these restaurants-on-wheels started not too long ago, in 2008, when the mortgage crisis took hold. As financial chaos hit the food-service industry, brick-and-mortar spaces became too expensive for many aspiring restaurant owners to secure. Luckily, food trucks offered an alternative with much lower startup costs. The movement gained even more momentum in 2009, when L.A. chef Roy Choi started using Facebook and Twitter to let customers know where his Kogi BBQ Taco Truck would be stationed for the day. Choi has come a long way since those days, and so have many other creative chefs. Here are some of our favorite trucks around the country.
