When we came up with the idea of devoting an entire issue to meat, it seemed like a good idea…at the time. After all, I am one of those who think any vegetable wrapped in bacon is bound to taste better.
And yet, here I am now thinking that, when it comes to meat, “ignorance is bliss” …but I know ignorance is never the answer and thus this winter issue touches on some of the complex issues with being a carnivore.
