Arguably chocolate truffles are the most decadent of confections. From the traditional bite size chocolate dusted ball with its dark, rich Ganache center to the innovative truffle treat with flavors ranging from tequila lime to curry to Earl Grey. All truffles are exquisitely dense and loaded with flavor. But to create these minute pieces of heaven takes time and patience in the kitchen. Laura Anhalt, co-owner of The Taste of the World, knows this all too well as she has been making her signature truffles for her clientele for years. After an unsuccessful try at selling her truffles retail (she couldn’t keep up with the demand) she elected to go another route.
At the urging of the business partner, Beverly Barry, Anhalt decided to apply her deft sauce making skills to the creation of a chocolate truffle sauce. It took her a little over a year to perfect what is now called Mexican Chocolate Truffle Sauce. Tapping into her Mexican heritage, Anhalt sourced the finest cocoa beans from the Mayan Riviera which were ground into 3 oz. balls which she combined with fine organic cinnamon and raw organic vanilla.
The final result is a rich, chocolaty sauce with subtle notes of cinnamon and vanilla which when cooled is thick, just like the inside of a truffle. Use as a dipping sauce for fruits or bread or pour over a bowl of ice cream, this delicious sauce can be used in baking as well.
