
Grill Roasted Baby New Potatoes

2-3 potatoes per person, select new potatoes, red skins, fingerlings, whatever looks nice at market
1 tablespoon minced fresh garlic
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh rosemary
1/2 teaspoon fresh thyme
1 tablespoon extra virgin olive oil
Salt and pepper to taste
Wash potatoes, scrubbing lightly and removing eyes - do not peel. Halve potatoes and place in a large mixing bowl. Add additional ingredients; toss to coat potatoes. Place the potatoes on a sheet of aluminum foil and wrap them tightly in the foil. Make sure to spread them out evenly so you have a pile with even thickness, about 1 ½ inches deep. Place the package on the grate directly over the heat, cover the grill, and cook for about 30-40 minutes. Yields 4-6 servings.
