Baby BLT’s Atop Field Greens

1-2qt Cherry tomatoes (depending on the size) or whichever type tomato you prefer (heirlooms, plum, etc.)
1 lb. bacon, crumbled
1 cup shredded cheese- suggestion: Yancy's Fancy XXX Cheddar
1/4-1/2 cup green onion, finely sliced
Fresh Basil
2-3 tablespoons extra virgin olive oil
Kosher Salt
Fresh Ground Pepper
Field greens
Balsamic vinegar
Hollow out the inside of tomatoes gently using a melon baller. Sprinkle hollowed out tomatoes with salt and pepper. Combine bacon, cheese, green onion, basil, and olive oil. Check for seasoning. Serve atop a bed of field greens, lightly dressed with olive oil and Balsamic vinegar. Yields 4 servings.
