Your New Favorite Breakfast: Zoats
If your morning routine of smoothie bowls and overnight oats is getting boring, there’s a new “it” breakfast that starts your day with a heaping serving of veggies. And before you start imagining oatmeal and kale together (bleh), stick with us – this trend is actually pretty delicious.
No more saving veggie-packed breakfasts for weekend brunch, zoats are a version of oatmeal that adds in grated zucchini (hello fiber!) and eggs (we see you, protein!) to give your day the jumpstart it needs. It’s also almost as easy to prepare as grabbing your favorite granola bar, and can be modified: oats can be left out if you don’t do grains and an egg substitute can be swapped if you are vegan.
We’re always looking for more ways to follow the Food Guide Pyramid and getting those 3 to 5 servings of veggies in everyday isn’t always easy, so adding them to breakfast on a consistent basis will be life changing. And if you have doubts about adding zucchini to your oats (we admit, it does sound a little strange), we promise that it blends well. Just think of yourself as a mom trying add hidden veggies into her kid’s food, but the adult version.
Not to mention, having vitamin-packed zucchini for breakfast will really up your game during your favorite morning class.
