pippin peaches

from Diane Flynt of Foggy Ridge Cider

This recipe features Pippin Gold apple cider-

brandy from Foggy Ridge in Dugspur (www.

foggyridgecider.com).

 

Serves 2

 

1⁄2 cup Pippin Gold

Fresh ricotta cheese, mascarpone cheese, or chevre

2 medium peaches, sliced with skin on

Biscotti or lace cookie (optional; to gild the lily)

 

1. In a small saucepan over medium heat, reduce Pippin Gold until it is syrupy and thick, tasting along the way to get the consistency and sweetness you desire.

2. Place a dollop of ricotta cheese in a bowl or on a small plate. Arrange peaches on top. Drizzle reduced Pippin Gold over top. Serve with biscotti.
