Cut slits in 3 or more peppers (depending on variety and fieriness; jalapeños are relatively mild, while habaneros are quite a bit hotter). Drop peppers into a bottle of vodka and let steep for anywhere from a couple of days to a week, tasting along the way to determine when it’s spicy enough for your palate.
