A turkey that is raised roaming the pastures lives a great life—and makes for a wonderful holiday meal. “The flavor is
superior, the flesh is firmer, and the meat is moister,” says Brett Wilson, founder of Charlottesville’s Horse & Buggy Produce. “Plus they’re not nearly as fatty as the ones from the grocery store.”
The turkeys you find in the freezer section are usually Broad Breasted White, which have been genetically modified to yield a lot of breast meat—so much so, they can’t even mate or walk properly. Older breeds such as the Bourbon Red and Naragansett are cherished because they are hardy and flavorful—and they haven’t been genetically modified.
“I grew up on the Butterball,” says Tom Silliman, owner of Sweet Dog Farm in Dyke. “The taste of heritage turkeys is beyond comparison. Last year, the heritage breeds Bourbon Red and Midget White came out on top in a blind taste test by Slow Food USA. Butterball came out at the bottom.”
