Dig on Pig
Chef Shane Coffey (formerly of Lulu Wilson Restaurant) has teamed up with Aspenite Zac Matthews to create Chef Shane’s, a local artisan bacon outfit. Partnering with Homestead Meats in Delta, the company’s first product on the market is Rocky Mountain Bacon, an all-natural, maple-aged, whiskey-barrel-smoked bacon. The team will also sell guanciale (pronounced gwon-Charlie), or Roman bacon, made from pork jowls, directly to restaurants, as well as smoked trout, smoked salmon and barbecue sauce forthcoming. The private-label bacon will be sold via Homestead Meats at the Aspen Saturday Market, at retail stores this summer, and online at www.chefshanesonline.com. For more information, contact Shane Coffey at [email protected].

Natural Fit
Last year Aspen resident Christine Sayre Goldstein decided to do her part to help rid the world of petroleum-based plastic bags. So she developed PotaTote, reusable canvas bags for shopping. Choose from five bags featuring designs of iconic Aspen architecture on the front and a downtown map by artist Jean Rosow on the back. For $10 each, PotaTotes can be purchased at Carl’s, Clark’s, Aspen Luggage, Pomeroy, City Market and at www. potatote.com, with a portion of the proceeds donated to area nonprofits. This summer watch for PotaTote’s bio-resin compostable grocery bag. Coming to a grocery store near you! www.potatote.com.
