Kohlrabi Hash Browns and Eggs |

Yield: 2 servings
Ingredients:
2 medium kohlrabi, washed and peeled 1 small Spanish onion 1 to 2 eggs, slightly beaten 1 teaspoon dry mustard Salt and pepper, to taste Canola oil, for frying
Directions:
1. Grate kohlrabi and onion into a small bowl. Press out excess water.
2. Mix in eggs and mustard. Season with salt and pepper.
3. Heat oil in a large frying pan, to about 365 degrees.
4. Spoon mixture into pan, about a half cup at a time. Brown on each side.
5. Dab off excess oil with paper towels.
